The old rules still apply. The work triangle [between the refrigerator, stove and sink] you keep as tight as you can, so it’s not tiring. [Directing] traffic flow is really important. When young children and guests are coming into a kitchen, it’s important that they’re not crossing the oven area, if it can be helped. It’s about keeping guests at bay, yet still integrated. You keep refrigeration to the outer edges, so that if you are entertaining or have young children, they’re not coming right into your cooking space.
